Baking vacuum cooling shines 2021 China International Baking Exhibition

On April 27, 2021, China International Bakery Exhibition 2021 was grandly opened at Shanghai New International Expo Center. In this exhibition, Webercooling and Shanghai Fuzhao jointly launched an innovative baking process - bread vacuum cooling.


 

The rare on-site vacuum cooling treatment of croissants showed the magic effect of vacuum cooling to the on-site audience, and the wonderful on-site explanation attracted the audience to stop one after another.

 

Bread vacuum cooling process is a fast rising baking innovation process overseas, which can cool high-temperature baking products to normal temperature in 2-8 minutes. This technology utilizes the principle that the moisture in the negative pressure chamber of the baking vacuum cooling equipment evaporates autonomously at a lower temperature, thereby absorbing a large amount of heat in the object to be cooled, so as to achieve rapid cooling.
